Hinton Tacos and Traditions: Part 2 of 2 (Elementary, Teen)

Hinton Tacos came from Steve’s Mom’s side of the family.  Anita’s mother, Charlotte Stephens had some friends in Winslow AZ who gave her the recipe.  The original recipe consisted of a White Sauce poured over a layer of corn tortillas layered with vegetables, meat, and cheese. 

Original Recipe For Hinton Tacos

Layers starting at the bottom:

Corn tortilla

Meat (browned hamburger seasoned with salt, pepper, garlic salt, and onion salt to taste)

Corn tortilla

Diced tomatoes and onions

Corn tortilla

Shredded or sliced lettuce

Cheese (Cheddar/Colby Jack Blend Fine Shred)

Sliced Black Olives

Hot/Warm White Sauce

White Sauce

5 tablespoons of white Crisco

5 tablespoons of flour

Melt fat, stir in flour, then add

2 cups milk, (can substitute half and half for extra creaminess)

Green tomatillo sauce to taste

Salt to taste

Stir continually until desired thickness.

My sister –in- love, Sarah, and I do not stick to the original recipe.  Here is what we do for the White Sauce.  Also please remember to call it white sauce.  Both of us have slipped and called it “gravy”.  The utter horror of the Hinton Men is a felt betrayal that their wives think they are putting "gravy" on their taco.   Believe me, you don’t want to go there!! 

Hinton  White Sauce (my version)

1 stick of butter.  Melt over heat.

After fat is melted add 1/3 cup of white flour.  Stir.

Then add 2 cups of 2% milk. 

Sprinkle Cumin in to taste

1 teaspoon of salt

Stir until desired thickness over medium heat.


We use the big flour tortillas, red onions instead of white, and I put taco seasoning in my hamburger (two packages for three pounds of meat).  I mix two lbs of ground turkey with one lb of lean ground beef.   We also always put a dollop of sour cream on top before the white sauce and add salsa on top of the white sauce.  I also like to occasionally make guacamole.  My recipe is three ripe avocados, lemon juice, lime juice,  salt,  garlic powder,  and  tbsp chunky salsa.  My three younger children usually all make burritos putting the white sauce inside the burrito  instead of the traditional Hinton Taco.
